Keep the beef chilled until you are ready to cook. Split the brioche and set out the mature cheddar, crisp lettuce, tomato and sauce so you can assemble the burgers as soon as the patties are cooked.
Heat a heavy frying pan until properly hot, with good ventilation. Place the patties in the pan and press firmly once as they make contact. Leave them undisturbed until a deep brown crust forms underneath, then turn.
Continue cooking the patties thoroughly. Check the centre with a clean food thermometer: minced-beef burgers should reach 70°C for 2 minutes, or an equivalent safe time-and-temperature combination. Add the mature cheddar towards the end so it melts. Colour alone cannot confirm doneness.
Lightly toast the cut sides of the brioche. Layer with lettuce and tomato, add the hot cheese-topped patties and finish with the sauce. Serve immediately.
Follow your product label for storage, food-safety and heating guidance. Use a clean food thermometer and check the safe cooking temperature for minced beef; a timer alone cannot establish doneness.
Choose your own timer duration as a reminder only. The online product record does not provide verified time presets. Alarms depend on the browser remaining active. A phone's native timer is safer for anything essential.
A reminder for this step, not a guarantee that food is cooked. You can run more than one timer.
